The story
¡Toma! is a bistro at Boulevard de la Sauvenière 70 in Liège, Belgium, where chef Thomas Troupin holds a Michelin star for 2026. The kitchen works in what it calls immersive cuisine, built on direct ties with local producers and artisans.
Troupin frames his cooking as a meeting between the cook, the farmer and the diner. The menus change with three seasons. Le Fooding's 2026 report describes trout churros, a snail pizzette, and beetroot gnocchi made with shredded veal, a dish that wastes nothing.
Le Fooding describes a dining room of shadowed walls and velvet seats, with a neon-lit dry-aging fridge in view and tables close to the stoves. The room opens onto the vegetable garden. Gault&Millau awards the bistro 17/20 for 2026 and calls it decidedly modern, set beside the old city walls.
