The story
L'Air de Rien, at Place du Vieux Tilleul 14 in Esneux near Liège, is a locavore kitchen that earned 15 points from Gault&Millau in 2026. Chef Stéphane Diffels builds a surprise tasting menu around his own vegetable garden and the seasons, with a wood fire at the centre of the cooking.
Diffels grills over wood and works with produce from local artisans. He makes his own condiments, including lactofermentations, misos and garum. The menu changes with the seasons and with what he harvests from his plot, so a dish may not appear twice.
The former stone farmhouse has raw wood and lime-washed walls, two bright dining rooms and a few smaller rooms. One is a private salon where guests can listen to vinyl records during the meal. From the dining room you can watch the small kitchen team work, and in warm months the terrace opens onto the edge of the garden, where herbs and flowers are picked for the plates.
The six-course surprise menu costs 109 euros. A five-course menu is 96 euros and a four-course menu is 75 euros, both served Tuesday evening to Friday lunch. A lunch formula is 56 euros without drinks. Vegetarian versions are available on request, and wine can be chosen from the list or left to the sommelier.
