The story
Innesto is a fine dining restaurant at Kapelhof 13 in Zonhoven, listed here under Hasselt, and it holds one Michelin star (2026). Chef Koen Verjans and host Sofie De la Rivière run the room together, with a seasonal, farm-to-table menu served at lunch and dinner.
Koen Verjans cooks with seasonal produce and a preference for clean, direct flavours. Gault&Millau gave the restaurant 16.5 points in 2026, noting the passion and attention to detail that the couple brings to guests. The fine dining kitchen works in a measured way, so each course reads clearly on the plate.
The menu published on the site pairs fish and shellfish with vegetables and bold seasonings. Hamachi from Zeeland arrives with organic tomato, parsley, cardamom and dashi. Lobster comes with fresh pasta, zucchini, chickpea and 'nduja. Galician beef is served with green asparagus, artichoke, onion and black garlic. Dessert is strawberry with white chocolate, pistachio and basil, or a cheese course chosen by cheesemaster Peter Verbruggen.
The restaurant moved in 2022 into a stately villa in the centre of Zonhoven, and the white building has a terrace. Sofie De la Rivière greets guests as host. For tables of six to eight on Friday or Saturday evenings, the team can serve in a private dining room, and parties of nine or more are asked to write to the restaurant by email.
Wine pairings come in set flights, including a selection called "The Essentials" and another called "The Exclusives," and most wines can also be ordered by the glass. Guests who prefer cheese to dessert can add a cheese course for a supplement. The wine list is built around producers from France, Austria, Portugal and Italy.
