The story
Raaf is a bistro at Slachthuisstraat 96 in Gent, Belgium, and Gault&Millau gave it 13 points in 2026. The room occupies the former Het Gouden Hoofd, a neighborhood fixture that has kept much of its character.
Aram Schuyesmans, formerly of Vrijmoed, and Michel Neerinckx, formerly of In de Wulf, run the kitchen together. Le Fooding noted that the two thirty-something chefs stand out more than the room does. Their plates include Limousin hanger steak with red beets and pickles from Tierenteyn.
Red mullet and kumquat ceviche arrives under thin slices of yellow beet. Barbecued kohlrabi comes with a green pepper sauce and herring roe, and mushrooms and mussels sit in a lime bouillon. The meal can finish with a butter couque, almond ice cream, Calva-soaked raisins and a hazelnut crumble. If you only want a drink and a bite, the bar seats are set up for that.
