The story
Le Variétés is a Belgian brasserie-rôtisserie at Place Sainte-Croix 4, Ixelles, 1050, Brussels. The Michelin Bib Gourmand (2026) recognises its good quality, good value cooking, built on the classics of the Belgian table.
The restaurant occupies the ground floor of the Flagey building, the ship-shaped landmark designed by the Belgian architect Joseph Diongre in the 1930s. The vintage decor has been kept largely as it was. Walls are clad in Zebrano wood. The L-shaped dining room opens onto both the bar and the kitchen, so guests can see into both.
The menu pairs the great classics of Belgian cooking with house specialities, and the chicken roasted on the spit is the dish to order. Larger tables get a different arrangement: from eight guests, the kitchen offers a reduced card with fewer choices or one menu for the whole table. Gault&Millau has scored the kitchen 13 for 2026.
