The story
Zilte, at Hanzestedenplaats 5 in Antwerp, is a seafood-led fine dining restaurant that holds three Michelin stars (2026). The kitchen is built around fish, shellfish and crustaceans, with terroir produce from long-standing suppliers filling out the plates.
Chef Viki Geunes, a self-taught cook, runs the kitchen with a stated focus on balanced, pure flavours. Gault&Millau scored Zilte 18.5 in 2026, citing the restaurant's class and refinement on the top floor of the MAS. The Zilte team describes its goal as a full gastronomic experience, from the plate to the room.
The Iodé menu lists langoustine with poultry liver and rhubarb, red mullet with sea cucumber and lardo, and king crab with fregola sarda and morel. The vegetarian menu pairs Périgord truffle with silver onion and black garlic. Both lunch menus close with a fig, chartreuse and pistachio dessert.
Zilte sits on the top floor of the MAS museum on the Eilandje, with wide views across the city. Wooden interior elements in earthy, calm tones shape the room. Viviane Plaquet leads the front of house, and head sommelier Aaron Moeraert also knows beer and sake well enough to pair them.
