The story
Cul'eau, at Gentsesteenweg 177 in Aalst, Belgium, is a modern French restaurant that Gault&Millau scored 12 in its 2026 guide. The kitchen works with a short, seasonal card and a set menu alongside a fuller à la carte.
Chef Bjorn starts each dish with the ingredient itself, looking, feeling and tasting before he plans anything. The French kitchen aims for clear flavours without extra complexity. Cutting, searing and plating get the same attention as the finished plate.
The menu lists five starters, five mains and five desserts, and it changes with the seasons. Beef from several origins receives special attention. Lunch follows the same approach at a quicker pace, with a lunch menu priced at €48.
Aperitifs are taken at the oyster bar, where artisanal bread arrives with a duo of house-made butters. The dining room was fully renovated, and each table gets new tableware and fresh linen. Michelin lists Cul'eau as Recommended for 2026.
