The story
Apriori is a contemporary restaurant in Aalst, Belgium, at Sint-Goriksplein 19, 9450 Haaltert, and Gault&Millau awarded it 14 points for 2026. Kristof Coppens founded the restaurant in 1996, and its seasonal kitchen changes with the calendar.
Kristof Coppens cooks consistently and harmoniously, and the menu stays tied to the season. The menu formulas follow the rhythm of the year. At lunch, a short à la carte selection of classics sits alongside them. The kitchen works with farmers and fishers who grow and harvest with care, and it cooks with what is in season to limit waste.
Gault&Millau singles out the fingerfood that opens the meal, including a mini meringue of red beet with smoked eel and a foie Rocher. A past New Year's Eve menu offered a Dieppe scallop with wild mushrooms and tarragon, and a venison course with a poivrade sauce. Dishes change with the seasons, so the printed menu is the best guide to what is cooking now.
The modern building blends into the green landscape, and the open kitchen is visible from the dining room. The interior is sober and elegant, with views over park De Warande. The room feels warm and relaxed, and the restaurant offers a private room and outdoor seating.
