The story
Les Touristes is a French restaurant at Rue de l'Hôpital 2 in Fribourg, and Gault&Millau gave its kitchen 16 points in 2026. The menus change with the seasons, and the restaurant has a terrace.
Christophe and Maël, two chefs from the Valais, run the kitchen together. Their French-based cooking is bold and carefully built, with a modern approach to technique. Diners choose from two menus, one of them vegetarian. Michelin lists the restaurant as Recommended for 2026.
The lamb shoulder arrives confit and cut into strips, wrapped in vine leaves, with sweet potato purée and a small fried potato. Seared scallops come with orange-glazed salsify, lemon thyme and a hollandaise flavoured with fermented shio koji rice. Poultry breast is served with a gentian jus and braised trevisano, whose bitterness is balanced by aronia berries.
Dessert follows a plate of cheese, then a lime-based course with Granny Smith apple and a ginger crémeux. The sommelier suggests pairings from a cellar rich in Valais crus.
