The story
Des Trois Tours is a French restaurant at Route de Bourguillon 15 in Fribourg, where chef Romain Paillereau holds 18 points in Gault&Millau for 2026. The patrician house sits just outside the city centre.
Paillereau took over the house in November 2021 and cooks with regional artisans and producers. The menu changes every month, with tasting menus called Emotion and Idylle. Wild herbs and citrus run through his French cooking. The Michelin Guide awarded the kitchen one star in 2026.
Gault&Millau's inspectors began with amuse-bouches of mushroom and rapeseed purée, yuzu-marinated trout and crisp, Asian-spiced chicken skin. Crab with mayonnaise, lemon balm, orange, puffed rice and Oscietra caviar followed. The highlight was confit skrei with dashi and sea urchin sauce, with a second piece of skrei served on a smoking grill with rosemary. Pigeon came as roasted breast, a leg in a crisp fritter and tartare in a small tart. The cheese course paired fresh goat cheese with almonds, vin cuit and sea buckthorn ice cream. Dessert played butternut against turmeric, coriander seed and galangal. Menus rotate, so expect different plates.
Guests dine in the elegant rooms or on the terrace. The wine cellar is extensive, and a wine pairing is available on request. Gault&Millau also notes the knowledgeable, friendly service.
