The story
Carelshaven, at Hengelosestraat 30 in Delden, runs a modern French kitchen built on Dutch seasonal produce. The Michelin Guide listed it as Recommended in 2026.
Arturo Dalhuisen took over as chef de cuisine on 1 September 2025 and shares the pass with head chef Kevin Annink. Dalhuisen previously cooked at De Leest and Restaurant Voltaire. Guests choose between four, five or six courses, or order à la carte. One set menu follows the Jeunes Restaurateurs ethos, and the other is a fully vegetarian Botanical menu drawn from the historic kitchen garden of Landgoed Twickel.
Carelshaven has appeared in the Lekker500 Top 500 for several years running, including 2026. That year's review mentions sea bass with lamb's ear, sea purslane and orange, finished at the table with basil oil. Quail with green asparagus and licorice foam also appears, as does tournedos with duck liver and red wine jus. The house Carelshaven Cuvée, a Johanniter from Wijngaard Hof van Twente, is a local pairing.
The restaurant occupies a former shipkeeper's inn that has stood on the Twickel estate since 1772. Inside, the dining room is classic-modern, and in fine weather the terrace looks over the park garden. Private dining rooms are available, and the hotel has 21 rooms. On Sundays a four-course surprise menu costs €49 per person.
