The story
Franziska, at Hainer Weg 72 in Frankfurt am Main, is a modern cuisine restaurant on the top floor of the Henninger Turm, listed as Michelin Recommended in 2026.
Mathis Thünemann leads the kitchen, and the menus draw on the recipes of Christian Mook's great-aunt Franziska, after whom the restaurant is named. Her table served Königsberger Klopse and falscher Hase, and she was already cooking with Asian flavours and fusion ideas. The team reworks German home cooking with a contemporary hand, and the dishes are not bound by convention.
The kitchen reinterprets familiar German plates. Schinkennudeln Deluxe arrives with truffle foam, and fried Brezenknödel come with noble mushrooms. Toast Hawaii returns with caramelised pineapple, while the cold "Kalter Hund" recalls children's birthday parties from the 1970s. A late dinner menu is served from 9:30 pm.
Floor-to-ceiling glass wraps the dining room and frames a 360-degree view of Frankfurt. An open show kitchen with a counter lets guests watch the cooking up close. The interior is elegant, with comfortable seating. Schlemmer Atlas lists the restaurant with three Kochlöffel for 2026. Cocktails are served at the bar, and German and international wines can be ordered at the table.
