The story
The Stage in Dortmund, at Karlsbader Straße 1A, serves modern cuisine and earned one Michelin star in 2026 for its high quality cooking. The restaurant sits on the seventh floor of the Dula Center, but its owners have announced that the lease will not be renewed, with the final service expected at the end of March 2026.
Michael Dyllong leads the kitchen, working alongside restaurant manager Ciro De Luca. The cooking follows seasonal produce and a modern approach. Recent menus have paired fjord trout with red beetroot, honey mustard and Madras curry, and Black Angus beef with Jerusalem artichoke and tarragon. Each menu opens with a short "Aromatic Flavour" course of small bites.
Dinner comes as a six-course menu at 179 euros or a four-course menu at 125 euros, with wine pairings available. A vegetarian menu follows the same structure, with dishes such as falafel, gyoza and gnocchi. On Wednesdays and Thursdays the kitchen serves a three-course lunch for 69 euros, which can be served in 90 minutes on request.
The private dining table seats 6 to 12 guests and overlooks the Signal Iduna Park. Groups can book it exclusively or at lunch by arrangement. Michael Dyllong also teaches cooking classes built around the seasonal menu of each period.
