The story

The First in Blankenhain: Italian Contemporary Cuisine With a Michelin Star

The First is an Italian restaurant at Lindenallee 1 in Blankenhain, inside the Spa & GolfResort Weimarer Land. It holds a Michelin star for 2026, and its Italian contemporary menu is a five-course dinner that changes with the season.

Chef and cooking style

Marcello Fabbri runs the kitchen, and the show kitchen sits in the light-filled winter garden. He cooks with Mediterranean produce and with vegetables from the house's own garden. Fabbri earned a Michelin star in 2003 at the Anna Amalia restaurant in Weimar, the first in Thuringia to receive one.

Dishes from the menu

Recent courses have included baked Kaisergranat (Norway lobster) with cauliflower and black garlic, and artichoke tortelloni with winter truffle. Braised veal cheek from Piedmontese calf comes with carrot, Jerusalem artichoke and coffee. Dessert is Amalfi lemon with almond and anise.

Wine pairing

Sommelier Thomas Stobbe leans on Italian bottles, selecting wines from South Tyrol to Sicily. The pairing is listed at 70 euros, and the full menu at 150 euros. Der Feinschmecker awarded the restaurant 3 points for 2026, describing it as Italian-style fine dining.

Concept Fine dining in Italian style at the Golfresort Weimarer Land. A five-course menu (cheese as an additional option). Culinary Style Chef Marcello Fabbri presents Mediterranean ingredients with complete authenticity, reminiscent of autumn. Gambero Viola (shrimp from Apulia) with a fig leaf, followed by a primo of Cappelletti (stuffed pasta) featuring pumpkin, goat cheese, sage, and saffron. Mackerel and octopus served with braised shallots and small Taggiasca olives. The main course features a tagliata of Fassona beef with porcini mushrooms, tomato oil, and peach. Classic and excellent! Wine Sommelier Thomas Stobbe primarily recommends Italian wines as pairings – ranging from Abruzzo to Sicily. Atmosphere A warm, cozy yet elegant ambiance in the winter garden. Conclusion A gastronomic journey to Italy!
