The story
Masters is a French-leaning fine dining restaurant at Lindenallee 1 in Blankenhain, inside the Spa & GolfResort Weimarer Land. Its modern French kitchen holds a Michelin star (2026), and the room is small enough that reservations are requested in advance.
Chef Danny Schwabe builds menus of four to six courses that combine Mediterranean and French technique with regional produce. Scallops arrive three ways, seared, as a foam and as a crisp, alongside lychee purée and fresh lychee. A deconstructed Waldorf salad returns as celery in several forms: a ragout, a beurre blanc, an apple sorbet and a powder made from celery seed and black cumin.
The dining room seats sixteen across four tables, which keeps service close and unhurried. Host Philipp Hansen worked at the Michelin-starred Apollo in Davos and holds WSET Level 2 sommelier training. The wine list is deep, and many bottles are also poured by the glass at guest-friendly prices.
