The story
Fiola is a contemporary Italian restaurant at 601 Pennsylvania Ave NW in Washington, where the Fabio Trabocchi flagship holds one Michelin star (2026). The restaurant also received the Wine Spectator Grand Award in 2019 for its wine program.
Executive Chef Antonio Mermolia grew up in Southern Italy and cooks with the Mediterranean coast in mind. He has said that the hardest dishes are the simplest ones, built from two or three ingredients that must be sourced well and cooked precisely. The kitchen works with farm-fresh produce and imported ingredients.
Dinner centers on thematic tasting menus. The Pascoli focuses on meat, the Marino on fish and seafood, and the Verdi on vegetables. The nine-course Brumidi shows the full range of the kitchen, and a four-course menu and à la carte options are also offered. The wine list started as a single page of about 60 bottles in 2011 and now carries deep verticals from leading Italian producers. Outside wine is not permitted.
