The story
Crown Shy, at 70 Pine St. in New York City, serves contemporary American cooking and earned a Michelin star in 2026. The restaurant sits on the ground floor of an Art Deco landmark in the Financial District.
Executive Chef Jassimran Singh leads the kitchen, with Pratik Parida as chef de cuisine. The cooking starts from European technique but takes its flavors from childhood meals, time spent traveling, and the cuisines of New York. Each dish draws on several of those sources at once.
The rigatoni comes with spring butter, guanciale and a confit yolk, while the ricotta ravioli is finished with Calabrian chili and chicken broth. Oysters arrive with sherry consommé and celery, and the grilled citrus-marinated chicken is served with the house hot sauce. For dessert, the chocolate marquise is made with brown butter and olive oil. The sticky toffee pudding is meant for two and comes with pecans and apple sorbet. The wine list earned a Wine Spectator Best of Award of Excellence in 2022.
