The story
Providence, at 5955 Melrose Avenue in Los Angeles, is a modern American seafood restaurant with three Michelin stars (2026). The kitchen builds its rotating eight-course tasting menu around wild-caught fish, served in a dining room that feels formal without being stiff.
Chef Michael Cimarusti, a James Beard winner for Best Chef: West (2019), sources wild-caught products, mostly from American waters. The menu shifts with the catch and can feature California spiny lobster or Alaskan king salmon.
The restaurant grows herbs and edible flowers on its rooftop and keeps honeybee hives there too. That nectar goes into the Japanese Penicillin cocktail and the post-dinner tea. A roving bar cart makes drinks at the table with rare spirits.
