The story
Stillwell's is a steakhouse at 2575 McKinnon St. in Dallas, Texas, recommended by the Michelin Guide for 2026. The dining room sits inside Hôtel Swexan in the Harwood neighborhood, and the kitchen builds most of its menu around beef.
Much of the menu centers on HWD, Harwood Premium Beef, Akaushi cattle raised locally through a partnership between Harwood and ranches in Texas and Oklahoma. Every cut is aged at least 28 days, broiled, and finished with salted butter and Stillwell's steak sauce. Orders range from a 12 oz filet mignon to a 42 oz tomahawk, and Japanese wagyu is sold by the ounce. Beyond the grill, the kitchen also serves a raw bar, lobster bisque, and seafood pomodoro with bucatini.
The wine list holds a Wine Spectator Best of Award of Excellence from 2024. The restaurant describes a list rooted in tradition, with older vintages from top producers alongside selections chosen for the Dallas market. It changes often, and the team says its markups are among the lowest in Texas. Cocktails range from a barrel aged old fashioned to a non-alcoholic ginger snap, and the bar hosts Cowboy Hour with half-priced drinks and small bites.
The restaurant takes its name from Hallie Stillwell, a pioneering West Texas rancher. Harwood Hospitality Group operates the hotel, and its design draws on the founders' Swiss-Texan family heritage and a European-inspired sense of space. Stillwell's also hosts private events, with the steakhouse team offering its dining rooms for special occasions.
