The story
Georgie, at 4514 Travis St. in Dallas, is a modern French restaurant that earned a Michelin Recommended designation for 2026. It sits within the Travis Street Hospitality group and keeps a seasonal dinner menu, with a separate brunch menu and dessert list on its site.
Acclaimed French chef Bruno Davaillon leads the kitchen and introduced a newly developed menu in March 2026. He previously cooked at Bullion in Dallas, and his approach rests on classical technique and seasonal produce. The French cooking here is meant to be precise and deeply satisfying, with exceptional ingredients at the center.
Executive Pastry Chef Dyan Ng worked alongside Davaillon at Mix in Las Vegas before joining the group in Dallas. Her signature porcini mushroom caramel comes with yogurt ice cream and an almond sable cookie. Another dish pairs mango pudding with almond tofu and Thai chili, which shows the Asian influences in her desserts.
The wine list carries Wine Spectator's Best of Award of Excellence from 2022, and it is overseen by wine director Daniel Bowman. The private dining room looks through to the butcher shop, and custom canning walls let diners see into the restaurant from there.
