The story
Next, a contemporary restaurant at 953 W. Fulton Market in Chicago, earned one Michelin star in 2026 for high quality cooking. The kitchen rebuilds its tasting menu a few times a year, each edition centered on a new culinary region, theme, or moment in time.
Next replaces its entire menu and dining experience several times a year. The current summer tasting menu, Wall Street 1987, runs from May 2 to August 30, 2026, and revisits New York in 1987, when the power lunch was born in The Grill Room. The menu is staged as a dining room of that era, with the city's most exclusive tables as its reference point.
The January to April Japan menu grew out of a trip the team took as part of Alinea's 20th anniversary celebration. It blends Japanese culture with Next techniques, drawing on markets, museums, and listening bars. The autumn Fashion menu takes a different route, treating each course as a garment and framing the meal as haute cuisine with a couture sensibility.
Executive Chef Alan Mileykovsky, General Manager Kate Lang, and Chef Grant Achatz develop the menus together. Next is part of The Alinea Group, and its Wednesday to Sunday service gives each seasonal theme a long run on the calendar.
