The story
CUT is a steakhouse in Beverly Hills, California, at 9500 Wilshire Boulevard inside the Beverly Wilshire, a Four Seasons Hotel. Forbes Travel Guide listed it as Recommended in 2026, and the kitchen pairs beef from regions around the world with shellfish and seafood.
Executive chef Drew Rosenberg leads the kitchen, where the menu centers on several cuts of beef sourced from across the globe. Wagyu is a regular highlight. The American steakhouse format gets a contemporary treatment here, with classic favorites given a few modern touches. The wine list is international and extensive.
Richard Meier, the architect behind the Getty Center, designed the dining room. It is all white, with a skylight meant to catch moonlight and an open kitchen that anchors the floor plan. Works by John Baldessari from Wolfgang Puck's private collection hang on the walls. Hollywood regulars make the room busy, so the person at the next table may be someone you recognize.
Next door, the CUT Lounge serves cocktails, curated wines and light bites from Puck's kitchen. DJ sets run on weekend nights. Wine Spectator gave the restaurant its Best of Award of Excellence in 2023. For bigger occasions, Petit CUT seats up to 24, and the full restaurant can host up to 160 guests seated.
