The story
The Peat Inn, on Peat Inn near Saint Andrews (KY15 5LH), serves modern Scottish cuisine and holds one Michelin star in the 2026 guide. The village around it took its name from the inn, which is thought to date from the mid-1700s.
Geoffrey Smeddle has run The Peat Inn with his wife Katherine since June 2006. He studied history at university, and the site links that background to a calm, questioning style of cooking. The kitchen builds a seasonal menu on classical technique and Scottish ingredients, and it also carries three AA Rosettes (2026).
Sample menus list East Neuk crab with sea trout roe, roast monkfish with pearl barley cooked in shellfish bisque, and confit shoulder of Black Isle lamb. Cairngorm venison appears on the tasting menu, and a hot coconut soufflé with mango and cashew nut sorbet closes the à la carte. The tasting menu is offered at lunch and dinner, with classic and prestige wine flights.
There are three dining rooms, and the reception lounge keeps its original log fireplace. Upstairs, The Residence has eight suites. Seven are split level, with a living room on a mezzanine, and one is on a single level for guests who prefer to avoid stairs.
