The story
Sabor is a Spanish restaurant at 35-37 Heddon Street in Mayfair, London, rated Very Good in The Good Food Guide 2026. It is the work of chefs Nieves Barragán and José Etura, who draw on the cooking of Castile, Galicia and Andalucía across two floors.
Barragán-Mohacho was executive chef at Barrafina before she and Etura struck out on their own. Their Spanish kitchen has since placed 53rd in the National Restaurant Awards 2026. The name means "flavour", and the menu is built around that idea.
Downstairs, diners sit at the pass and watch the daily-changing small plates being made. Orders are marked in pen on the counter and crossed off as they arrive. The tortilla is the signature, molten inside with a dot of mellow allioli on top. The lamb empanada, the sweetbreads in caper gravy and the seared tuna with ajo blanco are also worth ordering.
Upstairs, a spiral staircase leads to a more rustic room built around a wood-fired oven. Segovian suckling pig is the centrepiece, served as a single portion, a half or a whole animal. Galician rib of beef and Iberian lamb ribs sit alongside it. Back on the ground floor, the bar pours Estrella beer, sherry and Spanish wines from £7.50 a glass. Guests drop their paper napkins on the floor, as is the custom in Andalusia, and there is a terrace for warmer days.
