The story
KOL, at 9 Seymour Street in Marylebone, London, is a Mexican kitchen that earned one Michelin star in 2026. Chef Santiago Lastra cooks Mexican dishes with British ingredients, importing only corn, chocolate and native chillies.
Born in Mexico, Lastra opened KOL in late 2020 to cook authentic Mexican food from ingredients grown in Britain. Citrus and avocado do not grow here, so he developed replacements. Sea buckthorn takes the place of lime, which gives the cooking a distinctly British edge.
The menu changes with the seasons, but the langoustine taco has been a constant since launch. It arrives assembled, with the langoustine head served on the side so diners can squeeze its juices over the top. The tasting menu runs seven courses for £145, with surprises along the way. Past seasonal dishes have included lamb saddle with rye koji and wood sorrel over mulato mole.
The basement Mezcaleria bar holds one of the UK's strongest collections of agave spirits. Its drinks list pairs Mexican spirits with British botanicals, served alongside antojitos such as short rib empanadas and seasonal ceviches. Chef's Table, styled after a traditional Oaxacan home, seats up to 20 guests beside a private kitchen. The Mezcaleria can join it for groups of up to 50.
