The story
The Palmerston is a modern European restaurant and bakery at 1 Palmerston Place, Edinburgh, set in a former Royal Bank of Scotland building. It ranked 65 in the National Restaurant Awards in 2026.
Lloyd Morse runs the kitchen with a nose-to-tail approach and a clear fondness for Italian and French cooking. Whole animals are bought in and butchered on site, so lesser-used cuts end up on the plate. The menu changes daily, European style, and draws on Scottish farmers, growers and fishermen. Past dishes include rabbit and prune terrine, lamb mince on dripping toast, and pork belly with polenta and Parmesan.
Bread and pastries are baked in-house every day. Early visitors come for custard tarts, vanilla slices and buttermilk glazed doughnuts, since breakfast is served here. At dinner, buttermilk panna cotta is a dessert that earns repeat praise.
The former bank keeps its original marble, high ceilings, ornate wooden doorways and tall, slender windows. Bistro chairs and a steady dining-room hum give it a Parisian feel. The Good Food Guide 2026 rates it Very Good and singles out the casual, good-humoured service. You can eat at the bar without booking. The drinks list includes Newbarns beers, coffee Negronis and an adventurous wine selection. Dogs are welcome if you mention them when reserving.
