The story
Lokanta 1741 serves modern Turkish cuisine inside the Cağaloğlu Hamamı, at Profesör Kazım İsmail Gürkan Caddesi No:34 in Istanbul's Fatih district. The Michelin Guide lists it as Recommended for 2026.
Chef Durukan Özgen builds the menu around the olive, a nod to a hamam that was heated with burning olive pits for 300 years. Traditional and newer techniques share the stove, and each dish is meant to carry its own story. Guests can order à la carte or take the tasting menu. Gault&Millau gave the kitchen 12.5 points in 2026.
The cold section runs from çiğ köfte and Çerkes tavuğu to mütebbel. Hot plates include grilled octopus, tiritli pide and kazlı mantı, and the heavier mains include yağlı kara. Desserts take a Turkish route too, such as sütlü nuriye with pistachio and kaymak, or tahini muhallebi with a molasses crisp.
The dining room sits between the hamam's two domes, among ornate marble, tilework and low natural light. The terrace puts tables beneath the bath domes by day and open sky at night. Cocktails take cues from Ottoman culture, and the cellar pours Turkish wines alongside international bottles.
