The story
Borsa Restaurant in Istanbul serves Anatolian and Turkish cooking at Vaniköy Caddesi No:12, inside Adile Sultan Sarayı in Üsküdar. Gault&Millau gave it 13 points in 2026, and the Michelin Guide lists it as Recommended the same year.
The kitchen draws on Ottoman palace cooking and regional Anatolian recipes. Guests often order stuffed grape leaves, water borek, lamb tandir and kashkek. Starters include olive oil dishes with Ottoman roots, and main courses range from home-style Turkish cooking to seafood, red meat and white meat.
Interior accessories and textures echo the palace's architecture. In summer, the Heavenly Garden terrace looks out over the Bosphorus. The wine cellar offers local and international bottles chosen to suit the Turkish kitchen.
