The story
Scarlett Wine Bar and Restaurant serves French cooking and grilled seafood on the 37th floor of Pullman Bangkok Hotel G, 188 Silom Road, Bang Rak. It is listed as Recommended in the Michelin Guide for 2026, a recognition that sits alongside a Wine Spectator Award of Excellence from 2018.
The French kitchen leans on produce, with small tapas-style plates, charcuterie and cheese boards, dry-aged steaks and fresh seafood. Chef Sylvain Royer leads the kitchen, and a recent collaboration with Thai artist UNCLE.NUI paired his cooking with an art exhibition.
The seafood grill changes weekly. Fish and shellfish are laid out on ice, and guests pick their own before it goes over Binchotan charcoal. Dry-aged fish is part of the offer, along with tiger prawn, Maine lobster, sea bass, snow fish and turbot for two. Dishes arrive with steamed potatoes, romesco, chimichurri and lemon.
The rooftop terrace faces the Bangkok skyline and fills up around sunset. Happy hour runs from opening until 7 PM, with selected wine, beer and sparkling wine from THB 100++. The bar team also makes cocktails, from fruity and tangy to spirit-forward, and the wine list is one of the restaurant's calling cards. On Tuesdays from 5 PM, French Fine de Claire No.4 oysters are shucked to order at $1 each.
