Cooking from Franconia and the Alps

Chef Sebastian Rösch grew up in Franconia, and his menus bring that region together with Swiss Alpine produce. The house describes its style as refined, bourgeois cooking that follows the seasons and keeps its roots in view. Reviewers note the kitchen stays firmly rooted in Bavarian tradition while staying light in execution.

Plates worth ordering

The sausage and cheese salad marinates Gruyère overnight in its vinaigrette, which adds savory depth. The suckling pig arrives with crisp skin and a rich jus. The vanilla ice cream served with the dessert is singled out as the strongest sweet course.

Sebastian Rösch cooks with precision, thoughtfulness, and that touch of heart you can feel. The Franconian-born chef, formerly at the «Mesa», now blends his regional roots with culinary craftsmanship at the «Lindenhofkeller» in the old town – firmly rooted in Bavarian tradition yet always executed with urban lightness. This is evident in the sausage and cheese salad: sausage, Gruyère, pickled onions, gherkins, mustard seeds – all finely chopped like coleslaw. The vinaigrette? Clever: The cheese marinates in it overnight, yielding extra umami – though this also pushes the dressing to the forefront; the accompanying pretzel is flawless. An evening highlight is the cured mackerel with crisp peas, which would have paired even better if they were slightly sweeter. The accompanying sauce? Refreshing tomato broth with pickled lemon zest for brightness, roasted broad beans for crunch. The artichoke hearts with coco beans showcase Rösch’s mastery of texture: savory powder adds warmth, smoked almonds deliver a bacon-like kick, and goat fresh cheese brings freshness – an understated, successful composition. With the Wagyu, the presentation turns opulent: paper-thin carpaccio served over confit breast meat, accompanied by Alpine Sbrinz and a seasonal salad – a tribute to ingredient quality. Less convincing is the pretty «zucchini flower»: Zucchini slices arranged like a blossom around ricotta from the Kempttal and fregola sarda with porcini mushrooms – yet the dish remains somewhat bland in flavor. The schupfnudeln also fail to fully shine: while fluffy and coated in nut butter and beurre blanc, the accompanying lemony sauerkraut is too sweet – a touch of acidity would have balanced it well. A second highlight is Rösch’s homage to his homeland: a suckling pig with crispy skin, butter-tender meat, and rich jus; only a pity that the potato and cabbage salads seem overshadowed. The dessert? Technically precise, but lacking an “aha” moment: quark mousse on a pine nut biscuit base with stewed peach and caramel sauce. The vanilla ice cream, however, is a standout.
