The story
Centric Dining, the fine dining restaurant at Hotel Seepark on Seestrasse 47 in Thun, Switzerland, serves modern cuisine with Asian accents and earned a Michelin star in 2026. The kitchen works with seasonal ingredients from the region, and guests choose a five or seven course menu.
Sascha Spring leads the kitchen and cooks with produce from the Thun area. The cooks explain each course at the table, so the meal unfolds as a sequence of plates and stories. The approach mixes French precision with Asian touches.
Reviewers singled out a beef tartare served with beetroot and yuzu sorbet, and an Alpine zander with Japanese ginger, radish and apple cucumber sauce. A South African langoustine arrives with beurre blanc and a vadouvan spice mix built on red lentils and lime. Gault&Millau awarded the restaurant 16 points in 2026.
