The story
Salzhaus sits at Landhausquai 15 A in Solothurn's old town, directly on the Aare, and the Michelin Bib Gourmand it received in 2026 recognises good-quality, good-value cooking. The restaurant runs a fusion kitchen that blends classic dishes with Asian accents.
Christian Härtge leads the kitchen and describes his cooking as Asian-inspired fusion. Familiar dishes are reinterpreted with Asian touches, built on fresh produce that is largely regional. Gault&Millau awarded the restaurant 13 points in 2026. Its reviewers liked a vitello tonnato that leaned on the veal fillet instead of the tuna sauce.
The dining room looks out over the river in a car-free stretch of the old town. The wine list focuses on quality producers, including Maison Carrée in Auvernier and Georg Fromm in Malans. Alongside the weekday lunch box, guests can order a bar snack or the Japanese menu, which runs on Thursday evenings.
