The story
Balm - La Pistache stands at Balmstrasse 3 in Meggen, just outside Luzern, and serves a classic French kitchen with a strong line in seafood. Gault&Millau rated it 16 points in 2026.
Beat Stofer runs the house with his wife Sandra, and the family also keeps the 18-room hotel next door. Gault&Millau calls him an excellent cook who keeps reworking his dishes, especially seafood and sauces. At Balm the lines between daily plate, bistro and fine dining are loose, so guests order what they feel like. Michelin recognised that value with a Bib Gourmand in 2026.
The brasato raviolo is the showpiece: oxtail in wonton dough, a salt-baked celery slice beneath, seared foie gras with panko on top, and a twice-clarified broth poured at the table. The terrine of Swiss Black Angus boiled beef comes with apple, mustard and horseradish. Among the mains, monkfish arrives with a bouillabaisse-style sauce and Breton lobster with Thai curry sauce. Meat eaters can choose cordon bleu from herb-fed pork.
The calendar follows set weeks. Breton weeks (24 June to 12 July 2026) bring shellfish, oysters and mussels. Game weeks run from 9 September to 1 November, and a small-course Metzgete follows in late November. Wine comes from the house cellar, where Gault&Millau finds good bottles at fair prices.
