The story
Restaurant Olivo at Haldenstrasse 6 in Lucerne serves Mediterranean cooking inside the Grand Casino Luzern, and Gault&Millau awarded the kitchen 16 points in 2026. The menu rests on a classic French training with a Mediterranean focus.
Chef Hugues Blanchard has spent 32 years at the stove, 19 of them in Lucerne. He cooks with bright acidity, and a touch of lemon or citrus appears in nearly every course. Pasta is a constant: it opens the lunch menu, comes with a vegetarian option, and stays on the dinner card. Before Christmas each year he roasts a Martini goose, cooked for seven hours at 120 degrees.
The Gault&Millau report names marinated dorade royale with fennel salad and candied lemon peel, and langoustines with passion fruit vinaigrette, avocado cream and macadamia nuts. Gnocchetti sardi arrive with broccoli and lardo di Colonnata. The signature fritto misto di mare pairs calamari, red prawns and shrimp with a half lemon. Lamb shank is braised and served with a mild black garlic cream.
