The story
Auberge de l'Abbaye de Montheron occupies a former 12th-century abbey at Route de l'Abbaye 2 in Cugy, a short drive from Lausanne. Its farm-to-table kitchen earned 16 points from Gault&Millau in 2026, and the Michelin Guide lists it as Recommended for the same year.
Alba Farnós Viñals, a young Catalan chef, took over the Auberge with her partner Paul Marsden in mid-January 2025. Her cooking blends Mediterranean warmth with a close attention to local produce. Gault&Millau describes the style as contemporary and bold, a deliberate departure from the traditional cooking the abbey setting might suggest.
Homemade bread arrives with pine-infused rapeseed oil and fermented butter. A zucchini blossom stuffed with whitefish sits in a crayfish bisque from Lake Geneva, finished with verjus and absinthe. The lamb is served two ways: pink-grilled in a cream sauce with mint and mustard seeds, and as a ragout in puff pastry. The meal ends with a rhubarb, gin and woodruff savarin. The wine list draws on top Swiss crus.
