The story
Schmitte is the fine dining restaurant of the Romantik Hotel Schweizerhof at Swiss Alp Resort 1 in Grindelwald, Switzerland, where the modern cuisine menu earned 14 points from Gault&Millau for 2026. The kitchen runs a seven-course tasting menu built around seasonal, regional produce.
Executive chef Adrian Bolsmann was born and raised in South Africa, and his personal touches show up at the end of the meal. The Gault&Millau review describes a recent shift toward "more product and less distraction." Lamb comes from the village butcher, and the hotel says it produces its food seasonally and regionally.
The menu opens with vegetarian bites, including a tapioca chip topped with beetroot tartare and preserved mustard seed. A cauliflower cream soup with a foie gras terrine follows, rich and creamy with a gently sweet edge. The lamb arrives as a rare-to-medium saddle alongside a braised shoulder wrapped in a crisp parcel, with wild garlic sauce and demi-glace. The critic found the pike soup oversalted, though the saffron quenelles were delicate. Michelin lists Schmitte as Recommended for 2026.
The dining room was refreshed, and its slimmer contemporary look replaces the roughly 30-year-old Alpine baroque style. Schmitte opened within the hotel in 1986. The meal closes with a panna cotta flavored with rooibos tea, served with a glass of Vin de Constance from South Africa's oldest winery.
