The story
1910 Gourmet by Hausers is a contemporary restaurant in Grindelwald, Switzerland, at Dorfstrasse 53 inside the Hotel Belvedere. It holds one Michelin star (2026), and the kitchen sits below ground level in the hotel's historic cellar.
Dávid Rózsa, born in Hungary, runs the kitchen and builds the menu around the calendar. Summer dishes are vegetarian, autumn brings fish and vegetables, and winter turns to game. The approach is regional and contemporary, and it follows what the mountain produces each season.
A sourdough and potato bread is served early in the meal and has been praised as better than many bakeries. Basil cream with fresh peas comes with a horseradish glace, and a miso-glazed aubergine arrives with romesco and chili oil. Desserts include rhubarb with kombucha granité and a sponge scented with erica blossom, followed by Grindelwald honey glace. Gault&Millau awarded the restaurant 16 points.
