The story
Tosca, at Rue de la Mairie 8 in Geneva, earned one Michelin star for 2026 with its Tuscan kitchen. Chef Ivan Baretti leads the restaurant, and the dining room is decorated with the work of painter and sculptor Marco Borgianni.
Ivan Baretti, a 34-year-old chef from Liguria, turns childhood memories into plates. Gault&Millau awarded the restaurant 16 points for 2026 and singled out his rabbit confit with porchetta and his lamb with caramelised shallots and seaweed. He says there is no good cooking without respect for tradition, and that belief shows in the Italian classics on his menus.
Ravioli del plin are filled with guinea fowl and finished with a salmis sauce. The lamb is cooked at low temperature with hazelnut and wild leek, and the Bresse chicken comes with morels. Dessert includes strawberry meringue with apple sorbet and a dish called Il Latte, built on textures of milk. The Chef's Table seats guests beside the open kitchen for a five-act tasting menu inspired by Puccini's opera.
The ceiling holds Leda, a reinterpretation of a lost Leonardo painting by Borgianni. A Ginori candelabrum called Il Letterato stands on the tables, and a pair of Ferragamo heels from the 1930s sits under a glass dome near the piano. Two private salons, Salone Borgianni and Salone Michelangelo, host business dinners and private receptions.
