The story
Nour, at Norrlandsgatan 24 in Stockholm, is a Japanese Nordic restaurant that earned one Michelin star in 2026. The kitchen combines Nordic produce with Japanese technique on the third floor of the Nosh and Chow townhouse.
Sayan Isaksson leads the kitchen, and his cooking is known for precision and quiet depth. He pairs Nordic ingredients with Japanese influences, which gives the food a delicate but expressive character. Head Chef Ida Bauhn was named Årets Kock 2025, Sweden's Chef of the Year.
Much of the flavour is built in-house. The kitchen makes its own dashi from kombu, katsuobushi and mushrooms, along with koji, shio koji and two miso styles made from domestic yellow peas and white beans. Almost everything is grilled over charcoal, and the house XO uses Gotland chilis and dried Swedish squid. The 5-course menu is priced at SEK 2150 and the 8-course at SEK 2500, with wine and non-alcoholic pairings available. Vegetarian and pescetarian options are offered, but the menu cannot be made vegan.
The interior is plain and uncluttered, leaving the atmosphere to the guests. The lounge and main dining room sit alongside a chambre séparée that seats 6 to 11 people, a private space that still feels close to the buzz of the building. The White Guide placed Nour at Global masters level in 2026.
