The story
Brutalisten, at Regeringsgatan 71 in Stockholm, served modern cuisine built on a written dogma, and the White Guide rated it Masters level in 2026. The restaurant's website says it has been permanently closed since 20 December 2025, so this page describes the kitchen as it operated.
The cooking followed a published manifesto. Each dish used one product, and only water and salt could be added. Plates were kept free of garnish, and different ingredients appeared as separate units, so the diner chose what to combine. Portions were generous, and the kitchen often worked with overlooked or rarely used products.
Most seasonal produce, meat and fish came from Sweden and Norway, from small organic farms, animal-welfare-minded meat producers and responsible fishers. The wine list leaned toward small sustainable producers, mostly European. Non-alcoholic Brutalist Beverages were made from Swedish fruit and berries, and the cocktail list used only Swedish spirits. The White Guide described a Dalarna mountain cow served with nothing but salt and water, and credited chef Stefan Eriksson with making the dogma edible.
