The story
Les Cols sits on Carretera de la Canya in Olot, where Catalan cuisine is cooked with the landscape of the Garrotxa in mind. The restaurant holds two Michelin stars (2026) for excellent cooking.
Fina Puigdevall has run the restaurant since May 1990, working as both owner and chef. Her cooking keeps few elements and removes whatever she considers non-essential. The produce comes from the surrounding land: buckwheat, Vall d'en Bas potatoes, small white fesols de Santa Pau beans, wild river trout and wild mushrooms.
The tasting menu starts from the kitchen garden and the henhouse at Casa Horizonte, the restaurant's research space. Courses such as wild river trout, hot-grilled wild asparagus and duck with pears follow the seasons. The building was refurbished by RCR Arquitectes, the Pritzker Prize-winning studio, and the restaurant also offers a wine pairing and outdoor seating. The We're Smart Green Guide awards it five radishes (2026).
