The story
Paco Roncero at Alcalá 15 in Madrid is a modern Spanish fine dining restaurant that holds two Michelin stars (2026) for excellent cooking. Chef Paco Roncero builds his menus around the city, pairing Spanish tradition with newer flavours.
The kitchen starts from Spanish tradition and reinterprets it with ideas from international cooking. Dishes on the menu include a black truffle aerial tart and sole with black butter. Each plate reflects both the chef's career and the city he cooks in.
Four menus run from 190 to 310 euros, and the longest, Gran Madrid, has 25 courses. Sommelier María José Huertas leads the wine pairings, which change with the seasons and come in three tiers from 125 to 295 euros.
