The story
Ginés Peregrín is a contemporary restaurant at Méndez 6 in Almería, and it received a Michelin Recommended mention in 2026. The kitchen pairs Mediterranean roots with ideas from further afield, and the menus shift with what the local market brings in.
The kitchen describes its approach as avant-garde, with a focus on freshness and bold flavour. Mediterranean tradition sits at the centre, blended with influences from Holland, Mexico, Peru and Asia. The chef spent nine years in the Netherlands, cooking alongside demanding professionals before returning to Almería.
The Costa de la Sal menu, priced at 74 euros and marketed as 100% Almería, moves through seven courses. Dishes include goat sweetbreads with parsnip and braised onions, a garlic coloao with ray and grapes, and risotto with gurullos pasta, Serón cheese and red prawn. A low-temperature cauliflower with citrus mayonnaise and a zucchini ceviche with Almería pico de gallo also appear on that menu. The Sorpresa tasting menu and the green menu, built on seasonal vegetables, each cost 59 euros.
The dining room seats around 30 guests, which keeps the evenings quiet and personal. Private events come with a menu designed around the group. A two-person passport with wine pairing is also available as a gift, and the restaurant asks for at least 24 hours' notice for its menus.
