The story
Restavracija CUBO sits at Šmartinska cesta 55 in Ljubljana, a Mediterranean restaurant that Gault&Millau rated 15.5 in 2026. Pasta and risotto carry much of the menu, with fish and grilled meats alongside.
Istrian fuži and pljukanci anchor the pasta list. They come with asparagus and crisp pancetta, a house truffle paste, or beef fillet and sun-dried tomatoes. Tortellini arrive with burrata and white asparagus, and there is a Neapolitan ragù finished with pancetta. The risottos range from a Sicilian version with aubergine and mozzarella to one with beef fillet and porcini.
The Mediterranean side of the kitchen shows in the cold starters: sea bass sashimi with green chilli, octopus with Ligurian olives, tuna tartare with avocado. Mains include tuna fillet in a corn crust and sea bass baked in salt, sold by the kilo. Meat dishes run from oven-roasted lamb shank to grilled beef fillet with truffle paste and house-made ravioli. A daily list adds Adriatic scampi, grilled or in buzara.
CUBO says it has written an entire book about its desserts. The menu changes often, but a chocolate soufflé with vanilla cream and three house sorbets, and a panna cotta with fruit, are always offered. The wine list covers Slovenian and international bottles, and the Michelin Guide listed the restaurant as Recommended in 2026.
