The story
Tama is a Middle Eastern and international restaurant in Al-'Ula, at Ashar Valley, 43511 AlUla, Saudi Arabia. Gault&Millau gave it a score of 13 in 2026, and the kitchen works from seasonal menus built around local ingredients.
Tama means "here and now" in Aramaic. The menus combine Global and Middle Eastern cooking with produce from farms in the communities around AlUla. Spices that once moved along the incense route appear across the dishes, and the seasonal lists change with what the farms supply.
The fried shrimps come with a peach and halloumi salad, orange segments and date slivers. The khabsa chicken is spiced rice finished with steam under a thin galette, which keeps the dish soft. Dessert is a red fruit crumble with a strawberry ice cream that Gault&Millau singled out.
