The story
Maido, at San Martín 399 in Miraflores, Lima, is a Nikkei kitchen that was named The World's 50 Best Restaurants No. 1 in 2025. Chef Mitsuharu "Micha" Tsumura opened the restaurant in 2009 to pair Japanese technique with Peruvian ingredients, and the Japanese-Peruvian cooking here centres on a tasting menu of more than ten courses.
Tsumura was born in Lima to a family whose ancestors arrived from Japan in 1889. He trained in culinary arts in the United States, then went to Osaka to specialise in Japanese cuisine. The menu changes with the seasons, and the kitchen works with the best local produce available at the time. In 2024, the restaurant marked 15 years with a menu that looked back at its past, present and future.
The Triple brings together avocado, egg, tomato and chashu, the braised pork belly. Caracoles al sillao pairs sea snails with yellow chilli foam and a Nikkei sauce built on soy. Squid ramen arrives with Amazonian chorizo, alongside a duck dumpling and nigiri. An à la carte menu of seasonal dishes and the catch of the day is also available.
More recent courses draw on the Peruvian Amazon. One is a miniature parcel of pork jowl and palm heart, another is a "ham" made from sustainable paiche fish, and a third is yucca served with Amazonian beans. Diners can choose the tasting menu without pairing, with the Maido pairing, with the Tokujou pairing, or with a non-alcohol pairing.
