The story
Kjolle sits at Av. Pedro de Osma 301 in Barranco, Lima, where chef Pía León runs a Peruvian kitchen that placed ninth on The World's 50 Best Restaurants list in 2025. It is her first independent restaurant.
León worked as head chef at Central before opening Kjolle in 2018. Her Peruvian cooking starts with ingredients from across the country's ecosystems. The team spends months testing how to use each part of a product, which keeps waste low and flavour high. The produce still tastes like itself.
The tasting menu runs to nine steps. Its best-known course is Many Tubers, with toasted slices of olluco bound by oca paste and served on a cañihua tart. Other courses include lobster with coconut, cecina with crab, and cow rib with corn, tumbo and mochero chilli. A separate project developed with Masi, Theo Lab, explores cacao and other theobromas.
Ceramics, glassware and interior pieces are chosen with local artists and artisans from across Peru. Plates are built to look as striking as they taste, so expect dishes that photograph well.
