The story
Sabi Omakase is a Japanese omakase restaurant at Pedersgata 38 in Stavanger, Norway, where Edomae-style sushi is built around local seafood. It holds one Michelin star (2026), and the restaurant has run its counter in Stavanger since 2015.
Roger Asakil Joya, who works as the itamae, is accredited by the All Japan Sushi Association. He calls his approach Nor-Mae, a traditional Edo-style sushi with a Nordic twist. About 90 percent of the ingredients are Norwegian produced and locally caught. During closed periods he works with fishermen, divers and fishmongers to study the fish of the Norwegian west coast.
Omakase means "I trust you," and the meal is a set menu of 18 courses. Only ten seats are offered, from Wednesday to Saturday, with service starting at 19:00. The menu is priced at 3,500 NOK per person, and wine, sake and other drinks are available.
The White Guide places Sabi Omakase at global masters level for 2026, praising the rice dabbed with Icelandic wasabi and topped with squid, skrei, mackerel, pollock, shrimp and oyster. The guide notes the meal is a considered investment of both money and time.
