The story
Salty Seafood Restaurant at Grote Markt 3 in Zwolle is a seafood restaurant serving modern cuisine built around what the fishing boats bring in, and it holds a Gault&Millau score of 14.5 for 2026.
Chef Nino Willems runs the kitchen with his partner Aysen Bilal, who hosts the room. The two met while working at De Librije. Nino grew up in Zeeland, and the restaurant took shape after he met Hendrik Kramer, a fisherman who runs sustainable fishing vessels. The dinner service is a surprise menu, so the fish changes with each delivery. Friday and Saturday lunch offers a three- or four-course surprise menu, plus an à la carte card that shifts weekly.
The oyster tasting brings French Volant, Zeeland Creuse and Irish Mór oysters, finished with a red wine vinegar vinaigrette and a small bottle of Tabasco. Sea bream sashimi arrives with ponzu gel and a langoustine and vanilla dressing, and Aysen pours a kohlrabi sauce over it at the table. Halibut, when it is the catch of the day, is seared skin-side down and served with mushrooms, beetroot and a black garlic beurre blanc.
The dining room is small and intimate, so guests receive close attention from the service team. Seats at the bar, counter dining and a chef's table give different ways to watch the kitchen at work. Guests who prefer vegetarian food can say so two days ahead, and the chef will build a suitable menu.
