The story
Brass Boer Thuis at Nieuwe Markt 21 in Zwolle earned one Michelin Star in 2026 for its modern Dutch cooking. Noah Wynants leads the kitchen, and Stefan de Wilde hosts the dining room.
The kitchen draws on ingredients and influences from the Zwolle region. The Brass Boer menu is a chef's surprise, offered with meat or fish or as a vegetable version. Guests who prefer to choose can order à la carte or from the specials. The wines come from all over the world.
Lekker500's 2026 entry singled out warm scallops with bone marrow, black garlic and celeriac foam, served in a matte black bowl. It also praised a crispy-fried veal cutlet with Dutch shrimp and a peanut sauce, a pairing the reviewers called surprising. Treat these as a guide to the kitchen's style, since menus move with the season.
The mood is casual, with Delft blue tiles in the decor and the open kitchen in view of the tables. There is counter dining, outdoor seating on the square and a private room. Once a quarter, another chef takes over the kitchen for a Kitchen Takeover. Past guests include Gert De Mangeleer of Bar Bulot and Jonnie and Thérèse Boer of De Librije.
